61. Noolkol Chops
Kohlrabi/Knol Khol/Nulkol also known as German Turnip is a winter veggie and this easy yet spicy and tempting recipe is a family heirloom!!!
Ingredients:
Noolkol - 3 nos
Salt - 1/2 tsp
Oil - 2 Tbsp
Water - 1/3 cup
Coriander leaves - 2 Tbsp - finely chopped for garnish
For Grinding
Onion - 1 medium size - roughly chopped
Tomato - 1 medium size - roughly chopped
Pepper - 1 Tbsp
Fennel Seeds- 1 tsp
Red chili - 1
Cinnamon - 1 inch
Clove - 3
Cardamom - 2
Ginger - 1 inch - roughly chopped
Garlic cloves - 6 - roughly chopped
For Tempering:
Bay leaf - 1
Red chillies - 2
Curry leaves - 1 sprig
Fennel seeds - 1 tsp
Preparation:
Peel the skin of the noolkol and cut the noolkol to 1.5 inch pieces of 1/2 inch thickness
In grinder, add the ingredients under "for Grinding" and grind them to a rough paste. Just a few seconds should be good, do not make a smooth paste
In a cooker, heat 1 Tbsp oil and add the groung masala, fry for 2-3 minutes and add the noolkol and saute for another 3 minutes
Add 1/3 cup water and salt and mix well. Check and adjust salt as per taste
Close the cooker and wait for 1 whistle. Switch off, immediately and slowly release the pressure (very carefully)
Heat up 1 Tbsp oil in a broad pan and add the ingredients under "For Tempering" and sauté briefly
Add the Noolkol from the cooker to the pan
Roast it nicely till the masala turns dark brown and the water is obsorbed completely
Add coriander leaves and switch off. and serve with roti or sambar rice.
