Mutton (Bones) Rasam
Flavorful, Spicy Mutton Soup - Nutrient dense, health supplement while recuperating from any illness/injury. A comfort food on a cold/rainy day. Provides symptomatic relief from cold/flu.
Ingredients:
Main:
Mutton (goat) bones - 250 gms (with a bit of meat on the bones is preferred). Can be replaced with chicken bones
Onion - 1 medium size, finely chopped
Tomato - 1 medium size, finely chopped
Ginger - 1 inch, finely chopped
Garlic - 4 to 5 cloves, finely chopped
Green Chili - 1, finely chopped
Ghee (or coconut oil) - 2 tbsp
Curry leaves – 1 springs (about 10-12 leaves, chopped)
Turmeric powder - 1/2 tsp
Cumin seeds - 1/2 tsp
Mustard seeds - 1/2 tsp
Coriander leaves - 3-4 sprigs (finely chopped)
Salt As Needed.
Hot water - 4-5 cups
Roast and Grind:
Black pepper - 1 tsp
Cumin seeds - 1 tsp
Coriander seeds - 1 tsp
Chana dal (bengal gram dal/split chickpeas) - 1 tsp
Fennel seeds - 1/2 tsp
Cinnamon - 1/2 inch
Cloves - 2
Cardamom - 1
Dry red chillies - 1
Curry leaves – 1 springs (about 10-12 leaves)
Preparation:

Dry roast all the ingredients under "Roast and Grind" on low flame for about 5 mins , till they are fragrant and well roasted
Cool the mixture and then dry grind into a fine powder

Add the mutton, 1/2 tsp turmeric, 1/2 tsp salt and 2 cups of water to a cooker and cook for 4-5 whistles
Rest the cooker and let the pressure ease off naturally. Place the cooker back on fire (without the pressure) and let it simmer for another one hour, at least
If you had some meat on the bone, you can separate and shred it and keep aside

Heat the ghee in a deep pan (use a clay pot , if available), add the mustard and cumin seeds.
Once the seeds starts to splutter, add the curry leaves, saute for a few seconds and add chopped ginger, garlic and green chilies; saute for 1-2 minutes.
Add in the onion and saute till the onions are transparent
Add tomato, salt and turmeric powder and let it cook till the tomato becomes soft and oil starts to separate
Add the spice power and mix well
Immediately add 3 cups of hot water and boil the rasam for 4-5 minutes
Add the mutton broth along with the bones and boil for 10 mins
Add the coriander leaves and the shredded meat
Switch off and serve hot as soup or as main course along with rice
